Your field will hold all of your production sites for resources. The higher your fortress level the more sites are available to build on.

Fortress level 9 allows for 35 sites to be built on.

You will gain additional field slots with the upgrade of the fortress in the City and the Dragon Keep in your Outposts.

There is are fields in the Spectral Ruins as well; however only Reaping Stones are available to build there.
